Mutton Yakhni Pulao

Yakhni means stock or broth. Mutton yakhni pulao is long grained basmati rice cooked in stock made of yogurt based mutton and spices. It is a very simple yet mouth watering dish.

  • Yogurt-2tbsp
  • Salt-to taste
  • Mutton-250gms
  • Nutmeg- 1small piece
  • Mace- a small strand
  • Cinnamon- 1/2 inch
  • Cloves-2-3pcs
  • Coriander seeds-1tsp
  • Ginger pieces-4-5pcs
  • Water- as required
  • Ghee-3-4tbsp
  • Onion-1cup
  • Ginger-Garlic paste-1tbsp
  • Soaked rice-1cup

  • Marinade mutton with yogurt and salt and refrigerate it overnight
  • Prepare a potli: take a muslin cloth, add cloves, cinnamon, mace, nutmeg,coriander seeds and ginger pieces, tie the cloth, keep aside.
  • In a pressure cooker, add the marinated mutton,potli and required water.
  • Cook for 2-3 whistles.
  • Strain the mutton, keep aside.
  • The stock that is left behind is the yakhni, strain it and keeep aside.
  • In a heavy bottomed vessel, add ghee.
  • Add onion, fry till pink in colour.
  • Add ginger-garlic paste, fry.
  • Add soaked rice, mix well.
  • Add 3/4cup of yakhni.
  • If the yakhni is not enough, add water.
  • Cover the pan with aluminium foil.
  • Cook on low flame for 20-25min.
  • Garnish with beresta (optional)
